Fudge Zucchini Protein Brownies

Ingredients
  

  • 15g Diet Doctor Belgian chocolate avalanche lean whey protein
  • 2 tbsp unsweetened dark cocoa powder
  • 1/2 tbsp tbsp Xylitol optional as your protein powder is already sweetened
  • 1 tbsp Almond flour
  • 2ml baking powder
  • 1/8 tsp salt optional
  • 1/2 Handful grated zucchini don’t squeeze out the liquid after grating)
  • 1 tbsp Coconut oil
  • 1 large eggs
  • 1 tsp vanilla essence

Instructions
 

  • Preheat oven to 180 Degrees Celsius.
  • Whisk together dry ingredients in a mixing bowl.
  • Finely grate zucchini (peel if you don't want green bits in your brownies). No need to squeeze out any moisture, this makes for fudgy brownies.
  • Add finely grated zucchini and remaining wet ingredients to dry ingredients and mix until combined. Batter will be kind of “sloppy.”
  • Linea 20 x15cm baking dish with baking paper.
  • Bake for 20-30 minutes until the center is no longer runny, but a toothpick or knife inserted comes out dirty. If you bake it to long the Brownie won’t be fudgy.
  • Let your brownies sit for 10-15 minutes before cutting into squares. Enjoy immediately or store in the fridge in an airtight container.
