Citrus Avocado Salad
Ingredients
- 1/2 large ripe avocado, peeled and sliced
- 1/4 large red grapefruit, sectioned
- 1/2 medium oranges, peeled and sliced
- 2 tbsp finely chopped red onion
- 1/4 jalapeno finely chopped
- 2 tbsp fresh cilantro leaves chopped
- 1/2 tbsp extra virgin olive oil
- 1/4 tsp pink Himalayan Sea salt, or to taste
- 1/8 tsp coarsely ground pepper, or to taste
- 1 tbsp crumbled feta cheese
Instructions
- Scoop out flesh of half an avo and cut into slices
- Peel and segment your grapefruit and orange
- In a large serving bowl, add avocados, grapefruit, oranges, onion, jalapeño and cilantro.
- Drizzle with olive oil, and sprinkle with sea salt and pepper and gently toss to combine.
- Top with crumbled feta cheese and cover
- Refrigerate for an hour before serving to allow the flavours to blend.
Notes
Serve cold, and enjoy with your choice of protein
