MFM DINNER – Creamy Zucchini Noodles with Mushrooms



2 zucchinis wash and make noodle like strands with a Spiralizer

1/2 pack button mushrooms wiped clean and chopped

1/2 pack Shitaki mushrooms chopped

1 small red onion chopped

1 clove garlic chopped

1-2 tbsp coconut oil

1/4 cup fat free cottage cheese

1 lemon zest and juice

1/2 teaspoon dried thyme

 Salt and pepper (Basil for garnish )


DIRECTIONS

Using a Spiralizer make “noodles” with the zucchini and set aside. Next, in a large sauté pan add the oil, onion and a pinch of salt and cook about 4 minutes and then add in the garlic and thyme cook another 2 minutes. Then add in the mushrooms (a bit more coconut oil if needed ) and some more salt and pepper.

Cook mushrooms for about 6 minutes and then add in the lemon zest and juice and cook another few minutes and then add in the zucchini noodles and cottage cheese. Cook everything while stirring it all around until the cheese has melted and top with basil and enjoy!
