CHICKEN SALAD CUCUMBER CUPS



1 large cucumber

½ cup of cooked chicken, shredded or cut small

1/2 tomato, diced

Fresh coriander, chopped

Garlic powder to taste

Onion powder to taste

Paprika to taste

Hot Sauce (Like Tabasco or a similar sauce)

2 Tbs fat free cottage cheese

DIRECTIONS

Peel your cucumber and cut it into 4 equal sections. Use a melon baller or spoon to remove the pulp halfway through each cup. Do not scoop all the way through.  In a small bowl, combine chicken, cottage cheese, tomato, coriander, seasonings and hot sauce. Scoop mixture into cucumber cups and enjoy!
