1/4 tsp salt

1/2 cup BBQ sauce [see below recipe]

1 cup onion sliced

1 apple

2 cups rocket

BBQ Sauce

100ml tomato paste
1/4 cup apple cider vinegar
2 tablespoons lemon juice
1 tablespoon tabasco
Lazy kettle hickory liquid smoke flavoring to taste [available atWoolworths]
1/2 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Stevia to taste
1 tablespoon crushed onion
3 cloves garlic crushed
1/4 teaspoon chili powder
Cayenne pepper to taste
Salt and pepper to taste
Water as needed

BBQ Sauce Directions:

Using a small saucepan, mix together all ingredients. Bring to a boil. Reduce heat and simmer for about 7 minutes. Add small amounts of water to achieve desired consistency and to help from burn. Use this BBQ sauce for a tasty addition to meat dishes.

In a large bowl, mix ground chicken and salt.

Add 4 Tablespoons water to a large pan along with the onion slices. Cook over medium heat, stirring occasionally until the water has evaporated and the onions are beginning to brown on the bottom of the pan (about 8 minutes). Add another 4 tbsp of water to the pan and let it cook off again, stirring occasionally. The onions should be nicely browned and caramelized.

Press chicken mix into a 20cm pizza pan. Cover with plastic wrap and press again or use a rolling pin to make the chicken as flat and even as possible. Remove the plastic wrap.

Bake in a 200̊C oven for 20 minutes, chicken crust will begin to brown.

Remove from oven and spread BBQ sauce over the crust, push sauce evenly around chicken crust leaving about 1.5cm from the edge with no sauce (so you will be able to hold your pizza slice).

Evenly distribute caramelized onions and apples – bake another 15 minutes. Add rocket and return to oven for 4-5 more minutes. Serve while hot.
