1/4 cup coconut oil
3 tbs unsweetened cocoa powder
1/4 tsp vanilla extract
2-4 tbs. low-fat half and half (or milk)
1/8 tsp. cinnamon
Dash of salt
Stevia to taste (you can substitute xylitol <which I prefer in this recipe> if you have access to it)
10 teaspoons of fresh peanut butter (1 teaspoon per cup)
Cupcake liners
DIRECTIONS
Melt the oil over medium heat in a sauce pan, then stir in the cocoa powder. Once blended and melted, add the half and half, stevia, cinnamon, salt, and vanilla.
Pour a thin layer of chocolate into your cupcake liners, then put them in the freezer for 10-15 minutes.
Remove from the freezer. Add one teaspoon of peanut butter to each cupcake liner.
Cover the peanut butter with another layer of chocolate mixture.
Put them in the fridge or freezer for a minimum of 10-15 minutes before serving. Welcome to a little taste of heaven!
