2 Eggs hard boiled
6 Egg Whites hard boiled
1 red bell pepper chopped
2 tbsp yellow onion minced
1/4 cup Greek yogurt plain non-fat
1 tsp dijon mustard
1/2 tsp garlic powder
1 tbsp chives freshly chopped
Juice of 1/2 lemon
1/2 tsp salt
8 butter lettuce

DIRECTIONS
Peel eggs and chop into a fine dice.
Place eggs in a bowl with red bell pepper, onion, yogurt, mustard, garlic powder, chives, lemon juice and salt. Fold the ingredients together until well combined.
Serve over butter lettuce.
