Christmas Party Melon Prosciutto Skewers

1 spanspek

12 fresh basil leaves

250g mozzarella balls

12 slices prosciutto

Balsamic glaze, for drizzling

Balsamic Glaze

1 1/2 cups (375ml) balsamic vinegar

3 tablespoons xylitol


Halve spanspek, then scoop out and discard seeds. Using a melon baller, scoop out 24 balls.

Assemble skewers: Layer spanspek, basil, mozzarella, prosciutto, and a second piece of spanspek until you have 12 skewers.

Drizzle skewers with balsamic glaze and serve immediately.
