Phase 2-Broccoli Chicken Casserole



100g chicken breast 100g chopped, grilled

2 cups broccoli florets

CAULIFLOWER SAUCE:

2 tbsp onion chopped

1 tsp garlic chopped

1 1/2 cups cauliflower chopped

1/2 cup chicken broth

5 tsp nutritional yeast

1/2 tsp lemon juice

1/2 tsp salt

1/8 tsp black pepper

DIRECTIONS

Make the Sauce by heating 2 tablespoons chicken broth in a medium sized pot. Sauté onions until translucent then add garlic.

Add cauliflower and chicken stock and cover. Steam for 5 minutes.

Add everything from pot into blender and blend until smooth. Add nutritional yeast, salt and lemon juice. Set sauce aside

Place cooked chicken and steamed broccoli in small casserole dish and pour cheese sauce over the top.

Bake in a 350-degree oven approx 20 minutes until cauliflower sauce is bubbling around the edges. Remove from oven and serve while hot!
