Quiche with Broccoli Spinach Tomato and Truffle Salt

Ingredients
  

  • 12 Eggs
  • Large Hand Full Kale or Spinach
  • 2 Tomatoes
  • 2 Handful Spinach
  • 1 handful Broccoli
  • Salt to taste

Instructions
 

  • Preheat oven to 350 degrees celcius
  • Grease two (2) muffin pans with olive oil
  • Whisk your eggs in a big bowl and add salt or truffle salt totaste.
  • Process the greens, tomato, broccoli, in a food processor or blender, until finely chopped but NOT smooth. Add to egg mixture.
  • Mix he egg mixture and veggie mix well and pour into muffin pans using a ¼ measuring cup
  • Bake for 20-25 minutes or until the eggs are set in the middle.

Notes

6 Protein and 3 Vegetable Serving 
 
This Quiche can store in the fridge for 3 days.
To reheat place under the broiler for 2 minutes.
