Quick Morning Scramble

Ingredients
  

  • 2 Eggs
  • 1 handful Greens = Kale / Spinach
  • 1 small Tomato
  • 1/2 handful Mushrooms
  • 1 tbsp Coconut Oil

Instructions
 

  • Crack eggs, into a bowl add sea salt and pepper to taste and set aside
  • Thinly slice mushrooms and chop tomatoes into bite size pieces.
  • Coat a medium pan with some cooking spray. Heat over medium-high heat.
  • Add in tomatoes, mushrooms and your greens (kale or spinach).
  • Sauté for 3 minutes and then pour your eggs over veggies.
  • With a spatula slowly begin folding eggs and veggies together, allow eggs to cook thoroughly until no longer runny.
