Quick Morning Scramble
Ingredients
- 2 Eggs
- 1 handful Greens = Kale / Spinach
- 1 small Tomato
- 1/2 handful Mushrooms
- 1 tbsp Coconut Oil
Instructions
- Crack eggs, into a bowl add sea salt and pepper to taste and set aside
- Thinly slice mushrooms and chop tomatoes into bite size pieces.
- Coat a medium pan with some cooking spray. Heat over medium-high heat.
- Add in tomatoes, mushrooms and your greens (kale or spinach).
- Sauté for 3 minutes and then pour your eggs over veggies.
- With a spatula slowly begin folding eggs and veggies together, allow eggs to cook thoroughly until no longer runny.
