Breakfast Yogurt Freezer Squares

Course Treat

Ingredients
  

  • 150ml unsweetened plain yogurt
  • 1 tbsp sweetener
  • 1/2 tsp organic lemon juice
  • 1/4 tsp vanilla extract
  • 1/2 tbsp chopped Almonds
  • 1/2 tbsp Chopped Cashews
  • 1/2 handful blueberries
  • 1/2 handful dried organic strawberries

Other topping ideas:

  • Fresh fruit
  • Chia seeds, sunflower seeds etc instead of nuts

Instructions
 

  • Linea small glass baking dish with parchment paper
  • Place yogurt in a small bowl.
  • Add sweetener, lemon juice, vanilla extract, and to a small saucepan and place over medium heat.
  • Cook for 3-4 minutes until it begins to slightly bubble.
  • Pour into yogurt then add chopped almonds and cashews and mix until well combined.
  • Pour mixture into baking dish and top with blueberries, strawberries.
  • Place in freezer to freeze 3+ hours or just simply overnight!
  • Cut into squares.
